Geno’s doesn’t make steaks in the usual sense of the word. It, nearby Pat’s, and other such emporiums make the city’s legendary (those who count calories would say notorious) Philly cheesesteaks — which aren’t steaks, either! They are hogie or submarine-style sandwiches, drammed with steak pieces, fried onions, melted cheese, and often, mayonnaise.
